PIP’S STORY

My daughter Olivia, who we nick-named Pippi when she was a little girl, was diagnosed with celiac disease when she was fourteen years old. Coming to grips with her new dietary restrictions was a challenge for Pip, but also for me as her mother.
As we learned together how to deal with her condition, I was inspired by her strength, determination and willingness to accept this new way of eating. I was determined that Olivia would not have to give up her favorites when it came to my baking. What ensued was a journey of discovery, as I learned to create wonderful recipes from gluten free ingredients. After just a short time on the new diet she commented to me, “Mom, do people really feel this good every day?” Success. Not only was she finally healthy and feeling well, she was doing so while continuing to enjoy her favorite baked treats.  Eating gluten free is more than a diet – it is a way of life. Due to the risk of contamination, our entire house became a gluten free zone. With my new celiac-friendly recipes, Pip’s brothers. Drew and Bradley, didn’t know (or care) that all the baking in the house had become gluten free.
Olivia paid me a wonderful compliment before she left for college saying “with everything you baked for me, I have never felt deprived.” Pip’s Place is for Olivia and everyone like her with celiac disease or a gluten intolerance. You can safely enjoy homemade baking with confidence because there is no chance of cross contamination. At Pip’s Place, you can finally feel free to indulge again.

ABOUT THE CAKERY
Pip’s Place is an upscale, gluten free bakery in NYC located on the. The cakery is dedicated to providing a safe haven for those with celiac disease or gluten allergies, where you can enjoy wonderful baked treats without the concern of cross contamination. Personal experience with celiac disease has fueled a passion to create fine desserts that everyone can enjoy, without sacrificing quality or taste. Pip’s Place has completed the Third Party Accreditation Process with the Gluten Free Food Accreditation program. Their unique blend of gluten-free ingredients, and a long process of trial and error, has allowed them to provide a wide range of delicious gluten free baked goods that are entirely indistinguishable from regular baked goods.

“Is that gluten free? Really?” is a common first response when their goods are sampled. Mmmmm …. is often the second.

“About a year ago a long time customer of ours asked me if I had tried a new gluten-free bread that was, at that time, new to the market.  It was described as “whole grain” and really good. There had not yet been a gluten-free whole grain bread that was mass produced and broke free of the long held stereotype of being akin to a brick than to its wheat based  cousin. So I sought out this bread at our local natural foods store.  I read the front of the bread bag and there were the words “gluten free” and “whole grain.”  Next I turned over the package and read the ingredients: Water, brown rice flour (not a bad start),tapioca starch, potato starch (things seemed to have quickly taken a turn in the less-than-whole-grain direction) then oil, sugar, then more refined starchiness. Somewhere down the line, I believe the eighth or ninth ingredient listed, was the other whole grain contained in the bread.  After that were a number of ingredients that I had difficulty pronouncing.  At this point it dawned on me just how different we do gluten-free at New Cascadia.  Simple, honest, wholesome and always gluten-free.

This was about the same time that we introduced our Multigrain bread.  What many consider to be our best bread, it is nearly 80% whole grain and without any refined ingredients or xanthan gum.  Sure, we use starch and xanthan gum in many of our products.  But we keep the refined stuff to a minimum.  Even many of our pastries are mostly wholegrain and made with a short, understandable ingredients list.  We take a simple, straight forward approach to baking: Comfort food for the gluten-free crowd that yearns for grandma’s old fashioned recipes of (pre gluten-free) days gone by.

We believe that our customers deserve the best, freshest baked goods available and we strive to make eating gluten-free an enjoyable experience. We use quality ingredients and even use vegetables, herbs and berries grown in the warmer months from our own organic garden beside the bakery. Costa Vida is a chain restaurant with about 45 locations in the South Western US.

The menu offers, “The ultimate way to eat a burrito. A piping hot tortilla stuffed full with cheese, sauce, black or pinto beans, cilantro lime rice, and your choice of protein. Don’t forget to get it smothered with one of our signature sauces: Red Enchilada Sauce, Roasted Green Chile Sauce, or Tomatillo Cilantro Sauce.”

The websites states, “We have worked diligently to remove wheat gluten from all our sauces, dressings, sauces and proteins. Natural glutens remain only in our flour and wheat tortillas and in two desserts–tres leches and key lime pie. This means that we offer “oceans of gluten-free choices” in our menu. All of these items are gluten-free: all enchiladas, all tacos, all salads (without the flour or wheat tortilla), all nachos, and our chicken tortilla soup…which uses corn strips.”

Sounds like a good place for a Celiac to eat.
